This is a simple banana bread recipe that I think you’ll love as much as I do. You can combine different sweeteners like coconut nectar and maple syrup, and also combine healthy fats like coconut oil and butter or use just one. You can add other surprises like chocolate chips or goji berries.
1 1/2 tsp. vanilla
Scant 1/3 Cup of maple syrup or honey
1 1/4 Cup spelt flour
2 teaspoons baking powder
1/4 Cup melted butter or coconut oil or combination
1 teaspoon cinnamon
Handful of crushed walnuts
Pinch of sea salt
Preheat oven to 350. Butter a 9×5-loaf pan. Mash bananas on the side of a bowl with a fork. To that bowl, add all wet ingredients. In a separate bowl, combine all dry ingredients. Pour wet into dry and stir until blended (not too much stirring). Pour into buttered baking dish. Bake at 350 degrees for 45 minutes or until fork comes out clean.
