It's so easy to focus on what's not working, and what we don't have, we can lose perspective on how very blessed we are. I make it a daily practice to focus on my blessings each day, and it feels great. What are you grateful for today?

Staying healthy this winter with coconut oil Here are some quick tips that can help to support you in staying healthy this season. Did you know that coconut oil is naturally anti-viral and anti-bacterial? Yep, it's true. Buy virgin coconut oil from your natural food store- be sure it doesn't say "refined" on the label. Add a heaping teaspoon to a smoothie with some yogurt or coconut milk, banana, vanilla extract, a splash of water and combine in your blender for a tasty nourishing treat. Adding other fruit is great too if you want it sweeter. You can enjoy it melted in your oatmeal, on a baked yam or squash, you can saute with it- just know it imparts a delicious coconut flavor- yum...
Another way to use this amazing healing food is on your skin. Winter weather and indoor heat can be harsh and drying, and here's a wonderful remedy for that..... I put a spoonful in my bathtub as it's filling up, and my skin gets totally nourished and moisturized. You can also use it after the shower to apply on your skin for the same benefits. I like the bath method because I can lay back and enjoy while my skin is getting nourished! |

Cooking classes and Teleclasses Cooking Classes are hands on and we use only organic ingredients. Everyone chops, slices and stirs a beautiful meal together, and of course, at the end of class, we sit around the table and enjoy the fruits of our labor- a delicious dinner! What I'm cooking and eating these days So many of you ask me what I eat, that I thought it would be fun to include this in the newsletter. Thanks to a friend Karin for inspiring this one. These days, I am in full winter mode- cooking and baking whenever I can, and truly wanting to stay in bed as long as possible each morning!
My most recent fun kitchen projects have always included greens, and I practice what I preach about cook once, eat two to three meals from it. I started with kale, collards and broccoli sauteed in olive oil with onions and garlic, simply seasoned with tamari soy sauce and some grated ginger. I add sliced carrots and red pepper at the end for color and crunch- (this is especially beautiful in winter since we are lacking color outside) To the greens, I added a can of organic beans (drained), and a splash of water. Cover and simmer until the greens are the texture you like. I enjoyed it with warm tortillas and raw cheddar cheese....Yum! (20 minute meal)
The next day, since of course, I had leftovers of the greens and beans, I sauteed an onion with some ground beef until browned, sprinkled some salt on the beef, then added the greens and beans mix to it, and that was my lunch. (10 minute meal- no kidding)
Last night, I made the greens dish without the beans. In another pan, I sauteed 1 onion and some garlic in olive oil, and added a few filets of wild salmon- sprinkled with ume plum vinegar and dried thyme. I turned them after about 6 minutes or so, adding more ume vinegar and thyme to the cooked side. The onions were caramelized and sooooo delicious. I served the greens and fish over quinoa with melted ghee. Absolutely divine. This dinner took 20 minutes, AND I made enough so I had it all over again today at lunchtime which took only 5 minutes to reheat!

What I'm watching these days I've been totally hooked on The Secret. The Secret is a wonderful DVD made in Australia to teach the law of attraction so we can all understand the concept of the power of how what we think about, we attract. Some of the teachers were on Oprah last week. She dedicated an entire show to the film, and the response was so tremendous, she had some of the teachers on again this week. There are so many positive and powerful messages in both broadcasts, and on the DVD, I wish I could wear a headset all day every day to input the information.
